There's no denying it- the mornings and evenings have been getting cooler as fall draws nearer. On the plus side, we can start using our oven again to make comfort foods like this baked egg breakfast casserole. Full of fresh veggies and quinoa, this is a nutritious meal to fuel your day. Adding a few cooked Chorizo or breakfast sausages would make this dish even heartier.
Ingredients
- 1.5 cups cooked quinoa (make the night before to save yourself time in the morning)
- 8 fresh Roma Tomatoes (*or a 14 oz tin Diced Tomatoes)
- 1 tbs oil
- 2 red scallion bulbs (* or any bulb onion)
- 1 garlic clove
- 1 tsp smoked paprika
- 1 tsp oregano
- pinch cayenne
- pinch salt & pepper
- 1 cup fresh torn Spinach
- 5 fresh Cherry Tomatoes halved
- 1/4 cup fresh Basil
- 1/2 cup shredded Parmesan
- 2 Eggs
